RECIPE OF HOPE

I’ve been thinking about my favorite books, and The Bell Jar by Sylvia Plath has always been at the top, of course. But, I’ve been thinking lately, for a long time...lately...

Sylvia, you didn't have to bake your head. You could have just baked some cookies. Wouldn't we all like to BAKE OUR HEADS. Pre-heat the oven to 375 and call it a day. But we don't. No, we get out the mixing bowl and the flour and the chocolate chips and the eggs and the whisk and we hope for the best. So, Sylvia, I'm looking for a few new friends. Ones who have the courage to muscle through the despair. People with spatulas and cookie trays, even if their utensils are just metaphorical. Because, we both know, cookies are fattening and have a lot of sugar. Well, I just had to tell you that Sylvia. I'm sorry. Are you?

Chocolate Chip Cookie Ingredients
• 3/4 cup sugar
• 3/4 cup packed brown sugar
• 1 cup butter, softened
• 2 large eggs,beaten
• 1 teaspoon vanilla extract
• 2 1/4 cups all-purpose flour
• 1 teaspoon baking soda
• 3/4 teaspoon salt
• 2 cups semisweet chocolate chips
• if desired, 1 cup chopped pecans

Chocolate Chip Cookie Recipe Directions
Preheat oven to 375 degrees. Mix sugar, brown sugar, butter, vanilla and eggs in a large bowl by hand. Stir in flour, baking soda, and salt. The dough will be very stiff. Stir in chocolate chips and pecans if desired. Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes or until light brown. The centers will be soft. Let cool completely then remove from cookie sheet.
